Apple Dumplings, Baked

Oven, in the book's wordsA moderately hot oven

Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Peel and core the apples, then fill the centers with currants.

  3. Roll out the pastry thinly and cut it into rounds large enough to cover the apples.

Assemble and bake

  1. Place an apple in the center of each round, wet the edges of the pastry, and pinch gently to seal.

  2. Place the dumplings seam side down on a baking sheet and bake for 20 to 30 minutes.

  3. When nearly done, brush lightly with water, sprinkle with moist sugar, and return to the oven to finish baking.

Serve

  1. Serve hot or cold.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Short crust pastry
Encases the apples and bakes into a crisp, sturdy shell that holds the filling.
Apples
Provide the main filling, softening as they bake to become tender and sweet-tart.
Currants
Add small pockets of concentrated sweetness and chew within the baked apple.
Moist sugar
Sprinkled on top near the end, it adds sweetness and helps the crust brown.

The step that matters

Sealing the pastry around the apples. If the edges are not wetted and pinched firmly, the pastry can open in the oven and let the filling leak out, leaving the dumpling dry and poorly shaped.

Swap the currant

How well each one fits the dish's main ingredients (apple, sugar):

  1. Pearfits better
  2. Vanillafits better
  3. Apricotfits better
  4. Currantthe original

Fit is the average pairing score against apple, sugar. Candidates are from the same food group and used in at least 100 recipes.
