Beef, Boiled

Ingredients

Directions

Prepare the beef

  1. Skewer or bind the beef into a compact form.

  2. Place the beef in a pot just large enough to contain it, covering it with barely enough water.

  3. If the beef is very salty, use cold water; otherwise, use warm water.

Cook

  1. Gradually heat the water to boiling point and skim well.

  2. Add the whole onions, thickly sliced turnips, and lengthwise cut carrots after skimming.

  3. If using suet dumplings, add them to the boiling liquid one hour before serving.

Serve

  1. To serve, replace skewers with silver skewers, pour some of the broth around the dish, and garnish with vegetables.

What each ingredient does

Salt beef
Forms the main meat, which becomes tender through long, gentle simmering in water.
Onions
Add aromatic sweetness and flavour to the cooking broth.
Carrots
Add natural sweetness and a firm texture that holds up to boiling.
Turnips
Add mild sweetness and a tender texture after simmering in the broth.

The step that matters

Gradually heat the water to boiling point and skim well. Bringing the water up slowly helps the beef cook evenly and keeps the broth clearer. Skimming removes the foam and fat that rise to the surface, which would otherwise cloud the broth and give it an greasy taste.

Swap the onion

How well each one fits the dish's main ingredients (beef, carrot, turnip, parsley, thyme):

  1. Parsnipfits better
  2. Leekfits better
