Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main protein; dried and floured squares brown and hold their shape in the gravy.
Butter
Carries the frying of the onion and adds richness and browning to the base.
Onion
Browned in butter to build savoury depth and sweetness in the base.
Ground rice and flour
Thicken the beef stock into a gravy that clings to the beef and vegetables.
Beef stock
Forms the liquid of the gravy and carries the savoury flavour of the dish.

The step that matters

Roll the beef squares in flour. A light, even coating of flour helps the beef brown slightly and gives the sauce something to cling to, so the gravy thickens smoothly instead of splitting or going thin.

Swap the onion

How well each one fits the dish's main ingredients (beef, butter, pepper, turnip, carrot, rice, flour):

  1. Leekfits better
  2. Parsnipfits better
  3. Okrafits better
  4. Onionthe original

Fit is the average pairing score against beef, butter, pepper, turnip, carrot, rice, flour. Candidates are from the same food group and used in at least 100 recipes.
