Brown Sauce

Why it works: Carrot and pepper match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and 14,555 recipes mention both. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Fat that fries the vegetables and carries their flavour into the sauce.
Flour
Thickens the stock into a smooth sauce as it cooks with the fat.
Brown stock
Forms the liquid base of the sauce and supplies most of its savoury flavour.
Onion
Adds aromatic sweetness and savoury depth as it browns in the butter.
Button mushrooms
Add earthy, savoury flavour and body to the sauce.

The step that matters

Frying the vegetables until brown. Browning the onion, carrot and mushrooms in butter develops deeper, roasted flavours through the Maillard reaction. Pale vegetables give a flat, washed-out sauce, so they need real colour before the flour and stock go in.

Flavor stand-ins for the onion

How well each one fits the dish's main ingredients (butter, flour, carrot, mushroom, tomato, pepper):

  1. Capsicumbetter flavor fit
  2. Spinachbetter flavor fit
  3. Potatobetter flavor fit
  4. Onionthe original

Fit is the average pairing score against butter, flour, carrot, mushroom, tomato, pepper. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
