Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Red cabbage
Forms the bulk of the dish and softens into tender strands during slow stewing.
Butter
Adds richness and carries flavour as the cabbage cooks.
Stock
Provides liquid for stewing and keeps the cabbage moist while it softens.
Vinegar
Adds acidity that sharpens the flavour and helps the cabbage keep its colour.
Pounded sugar
Balances the sharpness of the vinegar with sweetness.

The step that matters

Reducing the liquid at the end. Stirring over heat until nearly all the liquid evaporates concentrates the flavours. Stopping too early leaves the cabbage watery, while over-reducing can scorch the sugar and dry the dish.

Swap the cabbage

How well each one fits the dish's main ingredients (ham, butter, vinegar, pepper, sugar):

  1. Mustardfits better
  2. Capsicumfits better
  3. Shallotfits about as well
  4. Cabbagethe original

Fit is the average pairing score against ham, butter, vinegar, pepper, sugar. Candidates are from the same food group and used in at least 100 recipes.
