What each ingredient does

Cabbage
Forms the body of the soup and softens into tender strands as it simmers.
Tapioca
Thickens the soup as its starch swells and turns it slightly silky.
Milk
Adds creaminess and mild sweetness, rounding out the broth.
Butter
Adds richness and fat that carries flavor and smooths the texture.

The step that matters

Adding the tapioca. Tapioca must be sprinkled in gradually while the liquid is simmering, not dumped in at once, so it disperses without clumping. It thickens as its starch gelatinizes, so cooking it long enough until it turns transparent is needed for a clear, fully thickened result.
