Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cheese
Provides rich flavour and, when melted, a savoury body to the balls.
Flour
Gives the mixture structure so the balls hold their shape in the fat.
Egg
The yolk binds the mixture, while the whipped white lightens it and helps it puff.

The step that matters

Folding in the whipped egg white. Folding gently keeps the air in the whipped white. Stirring it in hard would deflate the foam, so the balls would fry up dense instead of light.
