Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the sauce and enrich it as they set gently without boiling.
Cream
Adds richness and smoothness to the sauce, softening its texture.
Bechamel sauce
Forms the creamy base that coats and holds the chicken.
Lemon juice
Adds acidity that brightens the rich, creamy sauce.

The step that matters

Stir the egg yolk mixture into the sauce off the heat. Egg yolks thicken by gentle heat; if the sauce boils, the proteins scramble and it turns grainy and curdled instead of smooth.

Swap the lemon

How well each one fits the dish's main ingredients (chicken, sauce, cream, egg, pepper):

  1. Lemonthe original
  2. Avocadofits about as well
  3. Coconutfits less well
  4. Limefits less well
