Chicken Patties

Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the pastry

  1. Preheat the oven to 400°F (200°C).

  2. Roll out the puff pastry and cut out 9 or 10 patty cases.

  3. Use a smaller cutter to mark the centers for the lids.

  4. Bake the pastry cases for 20 to 25 minutes until golden.

  5. Scoop out the soft inside of the cases and keep the lids.

Make the filling

  1. Mix the chicken, ham, mushrooms, and truffle in a bowl.

  2. In a saucepan, heat the Bechamel sauce and add the chicken mixture.

  3. Season with salt, pepper, and lemon juice, stirring until hot.

Fill and serve

  1. Fill the pastry cases with the mixture, place the lids on top, and serve garnished with parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main body and bulk of the savoury filling.
Puff pastry
Bakes into flaky, layered cases that hold the filling.
Bechamel sauce
Binds the chopped ingredients together into a creamy, moist filling.
Ham
Adds salty, savoury flavour to the filling.
Mushrooms
Add earthy flavour and a soft, moist texture to the filling.

The step that matters

Bake the pastry cases until golden. Puff pastry rises through steam released from its butter layers. If the oven is too cool, the layers will not puff, and the cases will stay dense and pale. Baking until golden also ensures they are dry and crisp enough to hold the filling.
