What each ingredient does

Chicken
Provides the main protein; partial cooking first helps it finish tender in the simmering sauce.
Macaroni
Adds starchy body and bulk, holding its shape and soaking up some of the sauce.
Tomato sauce
Supplies acidity and a bright, rich flavor base for the stew.
Espagnole sauce
Contributes a thick, savory brown sauce that gives the stew its body and depth.
Lemon juice or tarragon vinegar
Adds acidity that brightens and balances the rich sauces.

The step that matters

Simmer gently for 30 minutes. A gentle simmer keeps the chicken tender and prevents the thickened sauces from scorching or breaking, while the chicken finishes cooking through.
