Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Chocolate
- Provides the main flavour and colour, and adds richness to the cream.
- Egg yolks
- Thicken the mixture as they cook gently and add richness.
- Gelatine
- Sets the cooled cream so it holds its shape when unmolded.
- Ground rice
- Thickens the milk mixture and gives the cream a smooth body.
- Milk
- Forms the liquid base that the other ingredients are cooked and set in.
- Sugar
- Sweetens the cream and balances the bitterness of the chocolate.
The step that matters
Stir in the egg yolks over low heat. Egg yolks thicken by gentle heating, but if the mixture is too hot they can scramble and turn grainy. Cooling it slightly first and keeping the heat low lets it thicken smoothly.
