Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the oysters

  1. Remove the gills from the oysters.

  2. Simmer the oysters in a little water for a few minutes.

  3. Strain the oysters.

  4. Mix the oysters with the oyster liquor.

  5. Cut the oysters into 2 or 4 pieces, depending on their size.

Assemble the pie

  1. Divide the cod fish into large flakes.

  2. Place half of the flakes in a baking dish.

  3. Layer the oysters on top of the fish.

  4. Season the oysters with salt, pepper, and nutmeg.

  5. Pour the melted butter over the oysters.

  6. Cover with the remaining fish.

Top and bake

  1. Prepare the short crust pastry as directed.

  2. Season the mashed potatoes with salt and pepper.

  3. Warm the potatoes in a saucepan with a small piece of butter and 2-3 tablespoons of milk.

  4. Spread the potato mixture over the fish.

  5. Bake in a 350°F (175°C) oven for about 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cod fish
Forms the main body of the pie, providing flaky, savoury bulk.
Fresh oysters
Adds a briny, savoury flavour that seasons the fish.
Melted butter
Adds richness and moisture, carrying flavour through the fish and oysters.
Short crust pastry or mashed potatoes
Forms the topping that seals in moisture and browns in the oven.

The step that matters

Spread the potato mixture over the fish. The topping must cover the fish fully so it seals in moisture while the fish cooks gently. Gaps let the fish dry out and juices escape.

Swap the nutmeg

How well each one fits the dish's main ingredients (fish, potato, pepper, butter, oyster):

  1. Parsleyfits better
  2. Thymefits better
  3. Capersfits about as well
  4. Nutmegthe original

Fit is the average pairing score against fish, potato, pepper, butter, oyster. Candidates are from the same food group and used in at least 100 recipes.
