Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base that the starch thickens into a smooth sauce.
Cornflour
Thickens the liquid as its starch swells and gelatinises when heated.
Castor sugar
Adds sweetness and rounds out the flavour of the sauce.
Lemon rind
Adds fragrant citrus aroma that infuses into the warm milk.

The step that matters

Adding the cornflour mixture to the milk. Stirring constantly while pouring disperses the starch evenly and prevents lumps. Boiling then lets the cornflour fully thicken and lose its raw starch taste.
