Crab, Scalloped

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the crab

  1. Remove the meat from the claws and body of the crabs, discarding the unwholesome part near the head.

Mix and fill

  1. Mix the crab meat with breadcrumbs, salt, pepper, and mustard. Stir in vinegar and enough cream to achieve the right consistency.

  2. Transfer the mixture into buttered scallop shells and sprinkle lightly with breadcrumbs.

Bake

  1. Dot the top with small pieces of butter and bake at 350°F (175°C) until nicely browned, about 20 minutes.

What each ingredient does

Crab
Provides the main body and flavour of the filling.
Cream
Adds moisture and richness so the filling stays tender rather than dry.
Breadcrumbs
Absorb liquid and give the filling a light, binding texture.
Vinegar
Adds a touch of acidity that brightens the rich crab flavour.
Mustard
Adds a sharp, savoury note that complements the crab.

The step that matters

Bake until nicely browned. Baking heat sets the mixture and browns the breadcrumb top; pulling it too early leaves the filling loose and pale, while overbaking can dry the cream-based filling out.

Swap the mustard
