Fish Pie

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Remove skin and bones from the fish and chop it coarsely.

  2. Add the suet, potato, white breadcrumbs, and season with salt and pepper.

  3. Stir in the eggs and enough milk to form a stiff batter.

Bake and serve

  1. Transfer the mixture to a well-buttered baking dish.

  2. Cover the surface with browned breadcrumbs and dot with small bits of butter.

  3. Bake in a moderate oven at 350°F (175°C) for about 1 hour, or until set.

  4. Serve hot in the baking dish or reheat if prepared overnight.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture and help it set firm when baked.
Suet
Adds fat for richness and a moist, tender texture.
Milk
Moistens the batter so it bakes into a soft, custard-like set.
White breadcrumbs
Absorb liquid and help give the batter a stiff, cohesive body.
Mashed potato
Adds body and moisture, helping the batter hold together.

The step that matters

Stirring in milk to a stiff batter. The milk must be added gradually so the batter reaches a stiff consistency. Too much liquid makes the pie loose and slow to set, while too little leaves it dry and crumbly.

Swap the potato

How well each one fits the dish's main ingredients (fish, egg, milk, butter, pepper):

  1. Potatothe original
  2. Capsicumfits about as well
  3. Asparagusfits less well
  4. Chivefits less well

Fit is the average pairing score against fish, egg, milk, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
