Fish Pudding

Ingredients

Directions

Prepare the fish

  1. Remove skin and bones from the fish, then pound it well with suet. Alternatively, chop the fish finely and rub it through a fine sieve.

  2. Add the breadcrumbs, parsley, salt, pepper, and anchovy essence to the fish mixture and mix well.

  3. Beat the eggs slightly, then add the milk or fish stock and stir into the fish mixture.

Steam and serve

  1. Grease a plain mold or basin, pour in the mixture, cover with greased paper, and steam gently for nearly 1½ hours.

  2. Serve with anchovy, egg, or melted butter sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White fish
Forms the main body of the pudding and gives it its flavour.
Suet
Adds fat, keeping the pudding moist and tender as it steams.
Bread crumbs
Absorb liquid and help the mixture hold together with a soft texture.
Eggs
Bind the mixture so it sets firm when steamed.
Milk or fish stock
Adds moisture and loosens the mixture for a tender, even texture.

The step that matters

Steam gently. Steaming gently at a low simmer lets the egg-bound fish mixture set evenly. Vigorous boiling can make the pudding rise unevenly, crack, or turn rubbery and dry.

Swap the parsley

How well each one fits the dish's main ingredients (fish, bread, milk, egg, anchovy, pepper):

  1. Parsleythe original
  2. Capersfits about as well
  3. Nutmegfits about as well
  4. Celeryfits less well

Fit is the average pairing score against fish, bread, milk, egg, anchovy, pepper. Candidates are from the same food group and used in at least 100 recipes.
