Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the sauce

  1. Melt the butter in a saucepan over medium heat.

  2. Add the flour and cook for 3-4 minutes.

  3. Pour in the milk, stir until it boils, then let it simmer for 10 minutes.

Assemble and bake

  1. Separate the fish into large flakes.

  2. Add the fish to the sauce along with anchovy essence, ketchup, mustard, salt, pepper, and cayenne.

  3. Stir over heat until the mixture is thoroughly hot.

  4. Fill buttered scallop shells with the mixture.

  5. Lightly cover with breadcrumbs and dot with small pieces of butter.

  6. Bake in a 400°F (200°C) oven until nicely browned, or use a salamander to brown the surface.

What each ingredient does

Fish
Forms the main body of the filling, providing flaky texture and the dish's core flavor.
Butter
Enriches the sauce and adds richness and browning to the breadcrumb topping.
Flour
Thickens the milk into a smooth sauce that holds the fish together.
Milk
Forms the liquid base of the sauce, giving it a creamy body.
Anchovy essence
Adds a salty, savoury depth to the sauce.
Walnut ketchup
Adds a dark, tangy, savoury flavour that deepens the sauce.

The step that matters

Simmering the white sauce. Flour must cook in the butter and then simmer in the milk so its starch swells fully and the raw, pasty taste cooks out. Stirring keeps it smooth and prevents lumps from forming.

Swap the mustard

How well each one fits the dish's main ingredients (fish, butter, flour, milk, anchovy, walnut, ketchup):

  1. Shallotfits better
  2. Capsicumfits better
  3. Chivefits better
