Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Heat 2 tablespoons of butter in a small saucepan.

  2. Add mushrooms, shallot, and parsley; fry lightly.

  3. Drain off the butter into a sauté pan.

  4. Add brown sauce, lemon juice, and anchovy essence to the mushrooms; season to taste.

  5. When hot, pour a small teaspoonful into each paper case.

  6. Reheat the butter in the sauté pan; toss the roes gently until lightly browned.

  7. Place one roe in each case and cover with the remaining sauce.

  8. Add a thin layer of bread crumbs on top and place 2 or 3 small pieces of butter.

  9. Bake in a 400°F (200°C) oven for 6 to 7 minutes.

  10. Serve as hot as possible.
