Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Remove the stalks and skins from the mushrooms and trim them to a uniform shape.

  2. Melt the butter in a small saucepan.

Make the filling

  1. Add all ingredients except the butter, browned breadcrumbs, and brown sauce.

  2. Season the mixture with salt and pepper.

  3. Stir over heat until well mixed.

  4. Add brown sauce to moisten.

Bake and serve

  1. Pile the mixture onto the mushrooms.

  2. Sprinkle with browned breadcrumbs.

  3. Add a small piece of butter on top.

  4. Bake in a 350°F (175°C) oven for 10 to 15 minutes.
