Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Remove the skin and trim excess fat from the saddle of mutton.

  2. Take out the fat and kidneys from the inside.

  3. Fold the flaps under and bind securely in shape.

  4. Cover the back with several layers of greased paper.

Roast and serve

  1. Roast in front of a clear fire, basting frequently, or bake in a moderately hot oven at 350°F (175°C).

  2. Serve with good gravy and red-currant jelly.

What each ingredient does

Saddle of mutton
Is the main cut of meat, so its tenderness and juiciness depend on careful roasting.
Fat for basting
Keeps the surface moist and helps it brown as it roasts.
Gravy
Adds moisture and savoury flavour to the sliced meat when served.
Red-currant jelly
Adds sweetness and acidity that balances the richness of the mutton.

The step that matters

Covering the back with greased paper. The paper shields the thinner, lean back of the saddle from direct heat so it does not dry out or scorch before the thicker parts are cooked through.
