Mutton Sausages

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Chop the mutton finely or pass it through a mincing machine 2 or 3 times.

  2. Mix the chopped meat with the lemon rind, shallot, nutmeg, salt, and pepper.

  3. Add the egg(s) and enough stock to moisten the mixture.

  4. Form the mixture into a short, thick roll and enclose it in 3 or 4 folds of greased paper.

  5. Bake in a moderate oven at 350°F (175°C) for about 2 hours, basting frequently.

  6. Half an hour before serving, remove the paper and dredge the roll lightly with flour or coat it with egg and breadcrumbs.

  7. Serve with good gravy or brown sauce.
