Orange Drops

Ingredients

Directions

Make the syrup

  1. Rub sugar on the oranges to obtain the zest.

  2. Boil the sugar and water until it reaches the small crack stage.

  3. Add a little saffron to the mixture.

Shape the drops

  1. Cool slightly, then pour onto an oiled slab and mark into small squares.

  2. Break the squares apart when cold.

  3. Alternatively, use a sugar boiler with a spout to drop the mixture in small pieces.

  4. Use an oiled wire or knife to assist with dropping.

Dry and store

  1. Let the drops dry in a cool place for about 2 hours.

  2. Store them in an air-tight box.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Loaf sugar
Dissolves and boils into a syrup that sets hard and glassy as it cools.
Oranges
Their zest adds bright citrus aroma and flavour to the drops.
Saffron
Adds a golden colour and a subtle, floral aroma.

The step that matters

Boil to the small crack stage. The sugar's concentration at this point sets the texture. Stopping early leaves the drops soft and sticky, while boiling too long makes them brittle or darkens them with caramel.

Swap the saffron

How well each one fits the dish's main ingredients (sugar, orange):

  1. Cinnamonfits better
  2. Gingerfits better
  3. Allspicefits about as well
  4. Saffronthe original

Fit is the average pairing score against sugar, orange. Candidates are from the same food group and used in at least 100 recipes.
