What each ingredient does

Peptonized beef tea
Forms the liquid base and gives the jelly its meaty flavour.
Sheet gelatine
Sets the liquid into a firm jelly as it cools by forming a gel network.

The step that matters

Dissolving the gelatine completely. Softened gelatine must be stirred fully into the hot beef tea. Any undissolved granules leave weak or uneven spots, so the jelly may not set firmly throughout.
