Ingredients

Directions

The book says “a cool oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

  1. Pare and slice the pineapples thinly.

  2. Layer the slices on a large dish, sprinkling each layer liberally with sugar.

  3. Keep the dish in a warm place or place it in a cool oven daily for 7 to 8 days, turning frequently.

  4. Once dry, bake a few slices at a time in a moderate oven (350°F / 175°C).

  5. When completely cool, pack the slices in airtight boxes with paper between each layer.
