Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Whipped into stiff foam, its trapped air gives the cream a light, airy structure.
Leaf gelatine
Sets the whipped cream so it holds its shape when served.
Pistachio nuts
Add nutty flavour and a finely chopped, crunchy texture to the cream.
Caster sugar
Adds sweetness and dissolves into the gelatine mixture before it is combined.

The step that matters

Adding the gelatine mixture to the cream. The gelatine must be cool but still liquid. If it is too warm, it deflates the whipped cream; if it has already set, it forms lumps instead of blending evenly.

Swap the nuts

How well each one fits the dish's main ingredients (cream, pistachio, sugar):

  1. Cashew nutfits better
  2. Almondfits better
  3. Hazelnutfits better
  4. Nutsthe original

Fit is the average pairing score against cream, pistachio, sugar. Candidates are from the same food group and used in at least 100 recipes.
