Pork Pie

Ingredients

Directions

  1. Cut the pork into small dice and season with salt and pepper.

  2. Place the bones in a pot, add the onion, salt, and pepper, cover with cold water, and simmer for at least 2 hours to extract the gelatin.

  3. Put the flour in a large bowl and add a pinch of salt.

  4. Boil the lard and water together for 5 minutes, then add to the flour, stirring until cool enough to knead.

  5. Knead the mixture until smooth, cover with a cloth, and let it sit near a warm place for about 1 hour.

  6. Re-knead the paste, set aside about ¼ for the lid, and shape the rest into a round or oval form.

  7. If needed, use a small jar in the center to help mold the paste.
