Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Prawns
Provide the main protein, which cooks quickly and turns firm and tender when heated.
Butter
Carries the curry spices and adds richness to the sauce.
Flour
Thickens the sauce as it cooks with the butter and curry powder.
Curry powder
Supplies the main spice aroma and flavour of the dish.
Sour apple
Adds acidity and body as it breaks down during simmering.

The step that matters

Stir in the prawns and heat thoroughly. Prawn protein toughens and turns rubbery when overheated, so the prawns should be added late and heated only until cooked through.

Swap the onion

How well each one fits the dish's main ingredients (butter, flour, apple, coconut, lemon):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against butter, flour, apple, coconut, lemon. Candidates are from the same food group and used in at least 100 recipes.
