Prune Tarts

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Remove the pits from the prunes and chop them finely.

  3. In a bowl, mix the chopped prunes with cranberry juice and sugar to taste.

Assemble and bake

  1. Roll out the short crust pastry and cut into circles.

  2. Place a spoonful of the prune mixture in the center of each pastry circle.

  3. Fold the pastry over and seal the edges.

  4. Bake in the preheated oven for 20-25 minutes or until golden brown.

What each ingredient does

Prunes
Provide the main filling, supplying sweetness and a soft, jammy texture when cooked.
Short crust pastry
Forms the crisp, golden shell that encloses the filling.
Cranberry juice
Adds moisture and fruity acidity to loosen the chopped prune filling.
