Red Currant and Raspberry Tart

Oven, in the book's wordsA moderately hot oven

Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Strip the currants from the stalks.

  2. Place half of the currants in a pie dish with an inverted cup in the center.

  3. Add the sugar and raspberries, then top with the remaining currants, piling them high in the center.

  4. Cover with pastry, brush lightly with water, and sprinkle with caster sugar.

  5. Bake in a moderate oven at 350°F (175°C) for about 30 minutes.
