What each ingredient does

Carolina rice
Cooks in the milk until soft, giving the dessert its body and tender texture.
Milk
Provides the liquid that the rice absorbs as it simmers, making it soft and creamy.
Cream
Whipped into air bubbles, it makes the dessert light, rich and smooth.
Castor sugar
Sweetens the dish and dissolves easily into the cream.
Sherry
Adds aroma and a warm, wine-like flavour to the cream.

The step that matters

Cool the rice before folding it into the cream. If the rice is still warm, it will soften and melt the whipped cream, causing it to lose volume and become runny. Draining well also keeps excess liquid from thinning the cream.
