Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Absorbs the milk and swells into a thick mass that sets firm enough to cut.
Eggs
Bind the mixture and help it set as it cools.
Milk
Cooks the rice until soft and gives the mixture its creamy body.
Sugar
Sweetens the mixture and adds flavour.
Orange marmalade
Adds sweetness, acidity and citrus aroma to the filling.

The step that matters

Fry in hot fat until crisp. The cooled rice mixture is soft inside, so the batter must be fried in hot fat to form a crisp, golden crust before the centre heats through. Fat that is too cool lets the batter soak up oil and turn greasy instead of crisp.

Swap the orange

How well each one fits the dish's main ingredients (rice, sugar, butter, egg, milk):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits better
  4. Orangethe original

Fit is the average pairing score against rice, sugar, butter, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
