Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to a stiff foam, they lighten the texture and give the punch a smooth, airy body.
Loaf sugar
Dissolved into a syrup, it sweetens the punch and softens the icy texture.
Lemons
Their juice adds sharp acidity that balances the sweetness and brightens the flavour.
Rum or kirschwasser
Alcohol lowers the freezing point, keeping the punch softer and scoopable rather than rock-hard.

The step that matters

Partially freezing the base. Freezing only until partly set matters because the mixture must stay half-frozen to hold its slushy, airy texture. Freezing it solid makes it hard and icy, and the whipped egg whites must be folded in while the base is still cold but not fully frozen.

Swap the orange

How well each one fits the dish's main ingredients (sugar, lemon, egg, rum):

  1. Vanillafits better
  2. Orangethe original
  3. Pineapplefits about as well
  4. Limefits less well

Fit is the average pairing score against sugar, lemon, egg, rum. Candidates are from the same food group and used in at least 100 recipes.
