Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Scallops in Shells

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Trim the scallops by removing the beards and black parts.

  2. Clean 6 shells and butter them, then sprinkle a few breadcrumbs inside each shell.

Assemble and bake

  1. Place 3 scallops in each shell, season with cayenne, chopped parsley, and a squeeze of lemon juice.

  2. Mix pepper and salt with the breadcrumbs, cover the scallops with white sauce, and sprinkle with more breadcrumbs.

  3. Dot the top with small pieces of butter and bake at 400°F (200°C) for about 20 minutes.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Scallops
Form the main body of the dish and cook through in the oven.
White sauce
Adds moisture and a creamy texture that keeps the scallops from drying out.
Breadcrumbs
Form a crisp, golden topping and absorb moisture inside the shell.
Butter
Adds richness and helps the breadcrumb topping brown.

The step that matters

Bake at 400°F for about 20 minutes. Scallops turn tough and rubbery when overcooked, so the bake should stop once they are just opaque and the topping is golden.
