Somersetshire Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Weigh the eggs and use the same weight in flour, and half the weight of the eggs in sugar and butter.

  3. Mix the eggs, flour, sugar, butter, and vanilla essence until smooth.

  4. Pour the mixture into well-buttered cups or dairy cups.

Bake and serve

  1. Bake gently for 20 minutes or until done.

  2. Serve warm with jam or custard sauce, or cold with the inside scooped out and filled with jam or stewed fruit and cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide structure and set the pudding as they cook, while lifting its batter.
All-purpose flour
Gives the batter body so it holds its shape once baked.
Castor sugar
Sweetens the pudding and helps tenderize its crumb.
Butter
Adds fat for richness and a tender texture.

The step that matters

Baking gently. Eggs set through protein coagulation, so high heat can make the pudding puff too fast, then toughen or crack. A gentle bake lets it set evenly and stay tender.

Swap the vanilla

How well each one fits the dish's main ingredients (egg, flour, sugar, butter):

  1. Raisinfits better
  2. Vanillathe original
  3. Figfits less well
  4. Lemonfits less well

Fit is the average pairing score against egg, flour, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
