What each ingredient does

Calf's sweetbreads
Main ingredient; gentle braising keeps their delicate, tender texture and rich flavour.
Stock
Provides moisture and savoury flavour as the sweetbreads and vegetables braise.
Gravy or tomato sauce
Adds moisture and savoury, slightly acidic flavour to the finished dish.
Fried bread
Forms a golden, crisp base that holds the sweetbreads and soaks up juices.

The step that matters

Cook the sweetbreads gently. Keeping the braising liquid at a gentle simmer rather than a hard boil helps the sweetbreads stay tender, since high heat can toughen their proteins and make them firm and dry.
