Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the pudding

  1. Boil the milk in a saucepan.

  2. Sprinkle in the tapioca or sago and stir until boiling.

  3. Simmer gently until it becomes clear, stirring occasionally.

  4. Add the sugar and a good pinch of salt.

  5. When slightly cool, stir in the beaten eggs if using.

Bake

  1. Pour into a greased pie dish and bake at 300°F (150°C) for about 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca or sago
Swells and thickens the milk as it cooks, giving the pudding its body and clear, chewy texture.
Milk
Forms the liquid base that the starch thickens and the baked custard sets within.
Eggs
Add richness and help the pudding set during baking.
Sugar
Adds sweetness and balances the flavour of the milk and eggs.

The step that matters

Simmer until the tapioca turns clear. Tapioca starch must be fully cooked to lose its raw, chalky taste and become tender. Stirring keeps the starch from settling and scorching on the bottom of the pan while it thickens.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, sugar, egg):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Allspicefits less well

Fit is the average pairing score against milk, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
