Why it works: Rum and coconut work together. They rank in the top 8% of all ingredient pairs, and cooks put them together in 259 recipes. Both carry delta-decalactone, which smells sweet, creamy. The science ↓
Toast, Dry
Ingredients
Directions
The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Preheat the oven to 350°F (175°C).
Beat the eggs and sugar together until thick and smooth.
Gently stir in the flour until just combined.
Butter 6 or 7 dariol moulds and coat them thickly with castor sugar.
Fill the moulds three-quarters full with the mixture.
Bake in the preheated oven for about 20 minutes.
Once cooked, baste with sweetened rum and sprinkle lightly with coconut.
Serve cold.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
