Why it works: Clove and ginger match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 6,038 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Ripe tomatoes
- Provide the main body and bulk of the chutney as they cook down.
- Sour cooking apples
- Add pectin and tartness that help the chutney thicken and balance the sugar.
- Vinegar
- Adds acidity that sharpens the flavour and helps preserve the chutney.
- Brown sugar
- Adds sweetness and depth, balancing the sharpness of vinegar and fruit.
- Ground ginger
- Contributes warm, aromatic spice flavour.
The step that matters
Rub the cooked fruit through a sieve. Pressing the soft fruit removes skins and seeds and produces a smooth, even texture. Cooking the fruit fully first makes it soft enough to pass through the sieve easily.
Swap the apple
How well each one fits the dish's main ingredients (tomato, sugar, vinegar, clove, garlic, ginger, mustard):
- Limefits better
- Cherryfits better
- Avocadofits better
- Applethe original
Fit is the average pairing score against tomato, sugar, vinegar, clove, garlic, ginger, mustard. Candidates are from the same food group and used in at least 100 recipes.
