Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body and flavour of the sauce, breaking down as they reduce.
Butter
Adds richness and carries flavour from the aromatics into the sauce.
Shallots
Add a mild, sweet aromatic base when cooked gently.
Lean ham
Contributes savoury, meaty flavour to the sauce.

The step that matters

Cook gently without browning. Browning the ham and shallots adds bitter, toasted notes that can overpower the fresh tomato flavour. Gentle cooking softens them and builds a clean, sweet base.

Flavor stand-ins for the shallot

How well each one fits the dish's main ingredients (tomato, thyme, butter, ham, vinegar):

  1. Mustardabout as good a flavor fit
  2. Capsicumabout as good a flavor fit
  3. Shallotthe original
  4. Onionabout as good a flavor fit

Fit is the average pairing score against tomato, thyme, butter, ham, vinegar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
