Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the chestnut stuffing

  1. Slit the skins of the chestnuts and boil them in water for 15 minutes, then remove the skins.

  2. Return the chestnuts to a pot, add the stock, cover, and simmer gently for nearly 1 hour until tender.

  3. Rub the chestnuts through a fine sieve, then mix in the butter, egg, and season with salt and pepper. Add cream or milk if the puree is dry.

Stuff and roast

  1. Prepare and truss the turkey.

  2. Stuff the crop with sausage meat and the body with the chestnut puree.

  3. Skewer the bacon over the breast, baste with hot fat.

  4. Roast in a moderate oven at 350°F (175°C) for 1½ to 2½ hours, depending on size.

  5. Baste well and remove the bacon shortly before serving to allow the breast to brown.

Serve

  1. Remove the trussing strings, serve on a hot dish, and send the sauce or gravy to the table in a sauceboat.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chestnuts
Form the starchy, soft puree that fills the bird and adds body to the stuffing.
Butter
Adds richness and moisture to the chestnut puree.
Egg
Binds the chestnut puree so it holds together when stuffed and cooked.
Sausage meat
Adds savoury flavour and moisture to the stuffing in the crop.
Bacon
Bastes the breast with its fat and browns the surface as it crisps.

The step that matters

Remove the bacon shortly before serving. Bacon left on the breast until the end keeps the skin from browning; removing it late lets the breast brown while the bird stays moist underneath.

Swap the chestnut
