Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Whipped into a stiff foam that gives the dessert its light, airy structure.
Gelatine
Sets the liquid cream into a firm, sliceable texture as it chills.
Caster sugar
Adds sweetness and helps balance the richness of the cream.

The step that matters

Adding the gelatine to the cream. The gelatine must be fully dissolved and only cooled, not set. If it is too hot it can deflate the whipped cream, and if it is already setting it forms lumps instead of blending smoothly into the mixture.
