What each ingredient does

Veal knuckle
Forms the main body of the galantine and gives a firm, sliceable texture when cooked and pressed.
Sausage meat
Adds moisture and richness to the filling and binds the roll around the veal.
Slices of egg
Sets during cooking to form a decorative, firm layer inside the roll.
Veal bones
Release gelatine into the cooking liquid, helping the stock set into aspic-like jelly as it cools.

The step that matters

Cooking gently in the stock. Simmering gently rather than boiling hard keeps the meat tender and prevents it from breaking apart or becoming tough. Proteins toughen and the roll can split when the liquid is too violent.
