What each ingredient does

Cold roast veal
Forms the main body of the meatloaf and gives it its meaty flavour.
Eggs
Bind the mixture together so it holds its shape when unmolded.
Breadcrumbs
Absorb moisture and help hold the minced meat together in a loaf.
Macaroni
Forms a firm pasta lining and adds body to the sliced loaf.
Ham
Adds savoury, salty flavour to the minced meat filling.
Gravy
Moistens the mixture so it stays tender during gentle steaming.

The step that matters

Carefully unmold and serve with additional gravy.. The loaf is held together only by the egg and breadcrumbs, and the macaroni lining must stay intact. Letting it cool briefly and loosening the edges gently helps the shape hold when it is turned out.

Swap the nutmeg

How well each one fits the dish's main ingredients (veal, ham, egg, butter, pepper):

  1. Parsleyfits better
  2. Nutmegthe original
  3. Tarragonfits about as well
  4. Sagefits about as well
