Directions

Prepare the mushrooms

  1. Skin and trim the mushrooms, then place them in a saucepan with the butter, gravy, and seasoning.

  2. Stew gently for 35 to 40 minutes until tender.

Prepare and grill the venison

  1. Cut the venison into cutlets about ½ inch thick, trim the bones, and flatten the cutlets.

  2. Brush the cutlets with warm butter, season with salt and pepper, and grill for 20 to 25 minutes, turning occasionally and brushing with hot butter.

  3. Top each cutlet with a small pat of fresh butter and serve hot, with the stewed mushrooms on the side.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Venison
Provides the main lean meat, which browns on the grill and sets as it cooks.
Butter
Adds fat and richness, and carries flavour while brushing the cutlets so they stay moist.
Brown stock or gravy
Supplies liquid and savoury depth that becomes the body of the stewed mushrooms.
Fresh mushrooms
Soften during stewing and release their juices into the gravy, adding earthy flavour.

The step that matters

Grilling the cutlets. Lean venison dries out quickly over heat. Turning occasionally and brushing with hot butter keeps the surface moist and helps it brown evenly rather than scorch or toughen.
