What each ingredient does

Butter
Carries the onions and forms the fat base for the roux.
Flour
Thickens the sauce as it cooks with the butter and stock.
Stock
Forms the liquid body of the sauce, which simmering gently reduces and flavours.
Onions
Add savoury sweetness and depth as they brown in the butter.
Pickled walnuts
Provide the main sharp, tangy flavour and diced texture to the sauce.

The step that matters

Frying the flour until nut-brown. Flour cooked slowly in fat develops colour and nutty flavour, but if it is rushed it stays pale and tastes raw, or it scorches and turns bitter. Cook it gently and stir constantly.
