White Wine Sauce

Ingredients

Directions

  1. Cut the carrot and celery into large pieces.

  2. Put them with the milk, onion, and bay leaf into a saucepan and simmer gently for about 30 minutes.

  3. If the milk reduces, add more to maintain the original quantity.

  4. In another saucepan, melt the butter and stir in the flour, cooking for 7-8 minutes without browning.

  5. Let the roux cool slightly, then add the milk and vegetables, whisking briskly until it boils.

  6. Simmer for 10 minutes, then strain through a fine sieve.

  7. Reheat, season to taste, add the cream, and serve.
