Roast Quails

Ingredients

Directions

  1. Clean the quails and remove the head and neck.

  2. Truss the quails like a fowl.

  3. Rub the quails with a little butter.

  4. Tie a vine leaf over the breast of each bird and place a piece of fat bacon over the leaf.

  5. Fasten the bacon and leaf with a long skewer, arranging several birds on the same skewer.

  6. Roast the quails for 15 to 20 minutes.

  7. Once cooked, remove the bacon and vine leaf.

  8. Serve each bird on a square slice of buttered toast, garnished with watercress.

  9. Serve with fried breadcrumbs and good brown gravy.
