Cotelettes De Perdreau a LA Financiere

Ingredients

Directions

  1. Roast one partridge and bone the other.

  2. Pound the boned meat until smooth, then mix in the raw egg, panada, and Veloute sauce. Season and strain through a wire sieve to make the farce.

  3. Bone the cooked partridge when cold and slice it thinly. Cut out rounds for garnish and 8 to 10 pieces in cutlet shapes.

  4. Cut out small rounds of hard-boiled egg white, truffle, and mushroom.

  5. Butter 8 to 10 cutlet molds and decorate them with the small rounds. Place them on ice to set.

  6. Fill each mold with a thin layer of farce, add a slice of cooked partridge, and top with more farce. Smooth with a wet knife and press down well.

  7. Place the molds in a sauté pan with a little hot water and cover with a buttered paper.
