Why it works: Carrot and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 8,053 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓
Sauce Creme De Concombres
Ingredients
Directions
Prepare the cucumber
Peel the cucumber thinly, cut it into pieces, and place in a saucepan. Cover with water, add salt, and boil until tender.
Strain the water and rub the cucumber through a fine sieve back into the saucepan. Moisten with ½ pint of stock and simmer to reduce.
Make the sauce base
In another saucepan, melt the butter.
Peel and slice the onion and carrot, then add them along with the bay leaf, peppercorns, and parsley. Fry for 4 minutes.
Stir in the flour and cook for a few seconds without browning.
Boil the milk and gently stir it in. Add more milk or hot stock if too thick.
Simmer for 15 minutes, skim, and strain through a fine cloth or strainer.
Combine and serve
Mix half or more of this sauce with the cucumber puree, seasoning to taste with salt, pepper, and nutmeg.
Just before serving, stir in the whipped cream, whisking well. Do not allow to boil again.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Cucumber
- Forms the bulk of the purée, giving the sauce its fresh flavour and smooth body.
- Butter
- Carries the flavour of the aromatics and provides richness in the roux.
- Flour
- Thickens the sauce with the butter as a roux, giving it body.
- Milk
- Adds creaminess and moisture, thinning the sauce to a smooth consistency.
- Whipped cream
- Adds richness and a light, silky texture when stirred in at the end.
The step that matters
Stir in the whipped cream off the heat. Cream can split or curdle if it boils, and boiling also thins its airy texture, so it must be whisked in just before serving and kept below boiling.
