Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Break fish bones, trimmings, and skin into small pieces.

  2. In a large pot, combine fish parts with chopped onion, parsley, herbs, and white peppercorns.

  3. Add enough water to cover the ingredients.

Simmer and strain

  1. Bring to a boil, then reduce heat and simmer for 30-45 minutes.

  2. Strain the stock through a fine sieve before using.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fish bones
Release gelatin and savory flavour into the water, giving the stock body.
Onion
Adds sweetness and aromatic depth to the stock.
Herbs
Add aromatic flavour that infuses the simmering liquid.

The step that matters

Simmer gently after boiling. Once the stock reaches a boil, reducing the heat to a gentle simmer keeps it clear. A hard, rolling boil can emulsify fat and cloud the liquid.

Swap the onion

How well each one fits the dish's main ingredients (fish, parsley, thyme):

  1. Shallotfits better
  2. Carrotfits better
  3. Parsnipfits better
  4. Onionthe original

Fit is the average pairing score against fish, parsley, thyme. Candidates are from the same food group and used in at least 100 recipes.
